Housed in the former BBC Radio 1 HQ in the heart of central London, with a secret record room hidden downstairs, Caravan Fitzrovia offers signature all day dining and ‘well travelled’ flavours from morning to night. The main dining rooms are lined by a bustling cocktail and coffee bar and defined by blush brick screens.

Advance supported on this extensive project (the second with this client), by designing and installing the main kitchen in the basement, the bar on the ground floor in addition to creating and installing the first ever take out area for the brand. The design of Caravan ‘GPS’ was meticulously considered to deliver the demand for multiple on-site operations throughout the day and varying trading peaks.

Creating a bespoke central gantry with clearly defined manageable sections allowing for efficient communication between chefs, the site has a bar that spans the entire length of the premises, and houses Caravan’s notorious coffee set up, which winds its way to the takeout area. A bustling area, especially in the mornings, the operation is supported with an innovative Thermodyne cooking system to manage the holding of hot products at peak times, without any deterioration or yield loss. The Caravan Fitzrovia project presented a number of access challenges that required careful management on site, including positioning a 1.5 tonne pizza oven into the basement via a pavement access hatch, manoeuvring low ceiling heights and a precise coordinated approach with the ventilation supplier.
